This a great recipe to make using the left over pulp when making carrot juice instead of throwing it away. You may also use the carrot pulp to make carrot cake, cookies and veggie burgers. These recipes will be given at another time. Enjoy!
INGREDIENTS
10 carrots
3 stalks celery
1/8 cup parsley
1/8 cup scallions
1/8 cup green bell pepper
3 tablespoons vegan mayonnaise
1 pinch cayenne pepper
1 pinch sea salt season to taste
INSTRUCTIONS
Wash and scrape or peel the carrots to remove the skin
Juice the carrots with your juicer
In a medium size bowl, mix the pulp from juiced carrots with parsley, onions, celery, green bell peppers, vegan mayonnaise, cayenne pepper, and sea salt.
Note: this recipe will not work well with grated carrots, they must be juiced using a juicer.
